pork barbacoa

This pork is fantastic! Give it a try! We ate it with tortillas (buy the uncooked kind at the grocery store, absolute best!) beans, lime cilantro rice, lettuce, pico de gallo and cheese. MMMmmmm!

Pork Barbacoa

5-6 pound pork roast
3-4 cloves minced garlic or 1/2 tablespoon garlic powder
1 onion, diced
water

1 tablespoon cumin
3/4 to 1 cup dark brown sugar (depending on what sweet level you would like)
12-15 oz bottle La Victoria taco sauce
20 oz Coke


Place pork roast in a crock pot with the garlic and onion. Add water halfway covering roast. Cook on low for 6-8 hours.

Drain water and add remaining ingredients. Cook 4-6 more hours on low. Shred pork and serve. Great in burritos, salads, tacos, pizza, over rice, noodles...anything really!

So good and I cook it in the crock pot.

I have never tried rice in the crockpot. Sounds so much easier! I was going to post my recipe for it soon. But maybe I should try this one first.
