freezing fresh green beans

Photobucket

Today my crazy project is freezing 28 pounds of fresh green beans.
Yes you read that right....Twenty-eight pounds....
and yes, I understand we will be eating these everynight for a year....

Here is the process:

1-Rinse
2-Cut off tips
3-Put in boiling water for 3 minutes
4-Take out and put in a ice bath for a few minutes
5-Strain/Dry off the beans
6-Freeze in bags

I will document the process as I do this today. I have never attempted this before, so we will see how it goes.
Talk to you later, when I probably will never want to handle green beans again.

It will be great! We ate the ones you left with me, they were delicious, I even put them on my salad today, yummy. Tender and tasty, I'm sure they will turn out wonderfully.
